Podpeka is a traditional cooking method from the Mediterranean region, especially popular in Bosnia and Herzegovina, some parts of Croatia, Montenegro and Serbia. This technique involves cooking food in a shallow dish, typically made of metal or clay, with a dome-shaped lid called a “peka.” The dish is placed over hot coals or in a wood-fired oven, allowing for slow cooking that enhances the flavors of the ingredients.

Here’s a more specific overview of how to prepare a dish using podpeka:

Ingredients:

  • Meat: Common choices include lamb, chicken, or fish. For example, you might use a whole chicken or lamb shanks.
  • Vegetables: Potatoes, carrots, bell peppers, and onions are frequently used. You can also add seasonal vegetables for variety.
  • Herbs and Spices: Fresh herbs like rosemary, thyme, and bay leaves, along with salt, pepper, and garlic, are typically included.
  • Liquid: A small amount of broth, wine, or olive oil helps to keep the dish moist during cooking.

Preparation Steps:

  1. Layering Ingredients: In the podpeka dish, layer the chopped vegetables at the bottom. Place your seasoned meat on top of the vegetables. Add herbs and spices evenly over the meat and vegetables.
  2. Adding Liquid: Pour a small amount of broth or wine over the top, and drizzle with olive oil to enhance flavor and moisture.
  3. Covering: Place the dome lid over the dish. If using a wood-fired oven, you can also cover the lid with hot coals for even cooking.
  4. Cooking: Preheat your wood-fired oven to a high temperature (around 350-400°F or 175-200°C). Place the podpeka in the oven or on a bed of hot coals, and cook for about 1.5 to 2 hours. The cooking time can vary based on the type and size of the meat used.
  5. Checking for Doneness: After the cooking time, carefully remove the lid. The meat should be tender and the vegetables should be well-cooked.
  6. Serving: Serve the dish directly from the podpeka, allowing guests to enjoy the rustic presentation. It pairs well with fresh bread to soak up the flavorful juices.
